Today, I visited Hyehwa Dodam, which is famous for its delicious kimchi jjim.
Hyehwa Dodam is a famous restaurant that has been featured on YouTube and is also very popular among Koreans.
Even celebrities are said to visit often, so I was looking forward to it!

Our Visit
Today, I visited the kimchi jjim restaurant 'Hyehwa Dodam' located near Hyehwa Station.
There are many theaters nearby where you can watch plays, and a variety of shopping options, making it a perfect place to spend a day out.
I was excited at the thought of being able to enjoy a delicious meal in the unique, lively atmosphere of Daehakro.
The interior of 'Hyehwa Dodam' was filled with celebrity autographs on the walls, just like you'd expect from a famous Korean restaurant.
The aroma of a popular restaurant filled the air as soon as we walked in!
The editor ordered kimchi stew, green onion pancake, braised pork ribs, and a bowl of bibimbap. As soon as I looked at the menu, everything looked so delicious that it was hard to choose.
After ordering and waiting a bit, the basic side dishes came out first.
Among them, the fish cake with its slightly salty and subtly sweet flavor was really impressive!
Kimchi was not just a simple side dish, but had a deep flavor. I thought it truly lived up to its reputation as a great kimchi jjim restaurant.
Soon after, the main dishes started to be served one by one.
As the steaming hot dishes were placed one by one, I couldn't help but be amazed at the sight of the table filled so abundantly.
Just looking at it gives a comforting and neat feeling, so my expectations naturally grew.
Even before picking up my chopsticks, just the aroma and appearance of the food in front of me started to whet my appetite.
I couldn't resist after looking at the menu, so I ordered makgeolli as well. The editor chose chestnut makgeolli, which has a sweet taste.
It was an even more special experience because you mix the freshly made makgeolli well, put it in a kettle, and then pour it to drink!
Chestnut makgeolli has a subtle chestnut aroma and a smooth sweetness, so even those who aren't good at drinking can enjoy it without any burden.
This was a makgeolli I would really recommend to anyone who wants to try Korean traditional liquor!
First, let me introduce the bibimbap bowl!
The bibimbap bowl comes filled with seaweed flakes, chives, and sesame oil. It’s the perfect combination to mix with kimchi jjim or galbi jjim.
Since butter is provided separately, we recommend mixing it quickly while the rice is still warm.
The rich flavor of butter melting smoothly and blending with the aroma of sesame oil was truly captivating.
Just this one bowl of bibimbap was enough to complete a whole meal.
The next dish I want to introduce is Kimchi Stew!
'Hyehwa Dodam' became more well-known as its signature dish was featured as a popular restaurant on a famous YouTube channel.
It was made with properly fermented kimchi, so it wasn't too sour or spicy, yet it still had a deep and rich umami flavor.
The kimchi was so tender that it tore along the grain with just a gentle press, and the meat was moist and well-cooked, melting in my mouth.
If you wrap meat in softly fermented kimchi and take a bite, the flavor that fills your mouth is truly exceptional.
If you finely chop the leftover kimchi and meat, add them to a bibimbap bowl with the kimchi stew broth, and mix everything together, you'll experience a new charm as the savory and umami flavors blend perfectly.
You can taste the flavor of kimchi better when you eat it by itself, and when you mix it with rice, the savory taste is added, creating a richer flavor.
Next is braised pork ribs.
I could feel the care put into this dish the moment I saw it, with generous portions of large meat and sweet potatoes packed inside without holding back on ingredients.
The pork was so tender and well-cooked that it could be easily torn apart with chopsticks.
The marinade, with its exquisite blend of sweet and savory flavors, was deeply infused into the meat, so every bite filled my mouth with a rich taste.
After eating galbijjim, I start craving kimchi jjim again, and after having kimchi jjim, I end up reaching for galbijjim once more.
These two menus were an irresistible combination that kept coming to mind alternately.
If you’re visiting with several people, ordering these two menu items together will make your meal even more satisfying.
The portion was generous enough, so it was really great for sharing.
While having a meal, the editor brought some extra rice.
Mixing it in a bibimbap bowl is great, but I also wanted to enjoy that clean taste of simply topping rice with a steamed dish, without any extra ingredients!
After letting the broth from kimchi stew and galbi stew soak slightly into warm rice, then topping it with a big piece of meat or vegetables,
The moist and rich seasoning soaked into the rice grains, making it really delicious.
Be sure to try the bibimbap bowl, and I highly recommend enjoying the steamed dish over white rice as well!
The last dish to introduce is green onion pancake.
The visuals were overwhelming from the start; the jeon was bigger than a person's face, and it was generously topped with green onions of just the right size.
It didn't feel like the green onions were just mixed into the dough—they each felt alive!
The green onion pancake at 'Hyehwa Dodam' is almost fried, making the outside crispy and the inside moist—truly the perfect example of crispy-on-the-outside and moist-on-the-inside.
Dipping it in the soy sauce seasoning that came with it, the crispiness, savory saltiness, and fragrant green onion blended together, making it a flavor that truly called for makgeolli.
'Hyehwa Dodam' wasn't just a restaurant famous for only its kimchi stew.
Each dish is highly perfected, and the harmony of flavors is excellent, making it a place where you can truly enjoy authentic Korean cuisine.
Every dish was made with sincerity and effort, and with every bite, I could feel that care, so it was a truly satisfying meal.
