I visited the bossam specialty restaurant 'Insadong Maneul Bossam' located in Insadong today.
It is conveniently located about a 6-minute walk from Anguk Station,
Located in the alleys of Insadong, I was able to fully experience the traditional, tranquil atmosphere of Korea.
As soon as I entered the store, I could see a sign about waiting.
Since many foreign guests visit frequently, there are clear instructions available in foreign languages, so it might be helpful to keep this in mind if there is a wait.
I was impressed by how kindly things are explained so that even first-time visitors won't get confused.
The interior of the store was filled with a traditional atmosphere, as if an old hanok had been renovated.
You can feel the unique, tranquil atmosphere of Insadong even indoors, so I felt relaxed even before the meal.
There are regular table seats inside the store, but there's also a room where you take off your shoes before entering.
Thanks to the quiet and cozy atmosphere, it felt as if I had been invited into a room of a traditional hanok.
Since it's a space in traditional Korean style, I thought it could be an especially unique experience for foreigners!
When we visited, there were some foreigners also enjoying their meals, so we could feel that this place is loved by both locals and visitors from abroad.
The restroom is also decorated with a traditional feel, and since it is inside the store, it is convenient to use.
Another thing that stood out was that the walls of the store were filled with autographs of celebrities who had visited this place.
Seeing that many celebrities have visited, I could once again feel that this restaurant has been loved by many people for a long time.
Another interesting thing was that there was a map of 'Places to Visit in Insadong' attached to the store refrigerator,

Today the editor ordered 'Garlic Bossam (small)', 'Chive Pancake', 'One Block of Blanched Tofu', 'Young Radish Bibim Noodles', and 'Hangari Chestnut Makgeolli'.
The first dish to introduce is the signature and most popular menu item here, ‘Maneul Bossam’!
The thick, glossy meat looks so delicious that just seeing it makes my mouth water.
If you add the aged kimchi, dried radish strips, and lettuce that come with it, you can enjoy bossam in a variety of combinations to suit your taste, so I was really satisfied.
The key point of the garlic bossam was definitely the special garlic sauce made with yuzu!
The refreshing scent of yuzu and the subtle kick of garlic really bring out the savory flavor of the meat.
It's not a strong garlic scent, but rather soft and harmoniously blended, so even those trying it for the first time can enjoy it without worry.
Additionally, since the garlic sauce is served separately, you can adjust the amount to your liking and enjoy it even more.
Since bossam is a dish where you wrap boiled pork in kimchi or vegetables, the combination with the kimchi you eat it with is really important!
First, I wrapped it in aged kimchi and took a bite. It wasn’t spicy at all and had a clean taste, so I thought it would be perfect even for those who don’t handle spicy food well.
I'm an editor who especially loves kimchi among Korean foods, and the combination of boiled pork and aged kimchi was truly fantastic.
The savory flavor of the meat and the refreshing taste of kimchi blended together in my mouth, making me exclaim in delight.
This time, I tried wrapping bossam with dried radish strips and eating it.
It had a different charm from aged kimchi, with a sweet yet slightly spicy taste that went really well with the meat.
It's a flavor that's not too strong but still addictive, so I kept reaching for it without realizing it.
I think one of the great charms of bossam is the fun of combining it with different side dishes each time.
Lastly, I tried wrapping it with garlic sauce and dried radish strips on top of the wrap.
The flavors of each ingredient don't overlap, and the spiciness, sweetness, and mildness blend together in your mouth to create a truly wonderful taste.

The dish I'll introduce this time is buchujeon,
This is a traditional Korean pancake made with plenty of fragrant chives; it’s crispy on the outside and moist on the inside, offering an excellent texture.
If you cut it into bite-sized pieces and dip it lightly in the special soy sauce, the umami flavor is enhanced, making it even more delicious to enjoy.
Especially, the unique soy sauce here paired perfectly with the pancakes, so I couldn't stop using my chopsticks the whole time I was enjoying them!
I also tried another signature menu item here, the chestnut makgeolli.
In Korea, there is a culture of enjoying jeon and makgeolli together on rainy days, and on the day the editor visited, it happened to rain, so the combination of warm buchujeon and makgeolli was truly perfect.
The sweet yet subtle chestnut aroma of Chestnut Makgeolli filled my mouth and went down smoothly, which was truly impressive.
Plus, they served it in a traditional jar-shaped bowl, so it was great to really experience Korean makgeolli culture.
This time, it's young radish bibim noodles,
The spicy and tangy young radish with the savory aroma of sesame oil made this dish really appetizing.
After eating other warm dishes, this made my mouth feel refreshed and clean, so I could enjoy it even more pleasantly.
It's perfect as a finishing side menu!
I also tried ordering the blanched tofu,
The freshly blanched tofu was soft and mild, and I could really taste the rich, original flavor of the tofu itself. I really enjoyed it.
Especially when eaten with the napa cabbage kimchi served as a side dish, it paired well and wasn't bland, and when combined with bossam kimchi, it offered a unique flavor combination.
If you like a smooth texture, we definitely recommend ordering this together!
The side dishes served—napa cabbage kimchi, stir-fried seaweed stems, and pickled onions—offered an authentic taste of Korean cuisine.
Each one wasn't too spicy, but they all had different textures and flavors, making them perfect to eat with the main dish.
